As Easy way to Eat Your Veggies: Bucatini with Broccoli and Scallops

We've been trying to eat healthy and get more veggies lately. One of the most nutritious veggies is broccoli, but unfortunately, we think it's also one of the least pleasant to eat. This recipe then was a welcome surprise, giving us our nutritious broccoli amidst a delicious concoction of scallops, beans, and pasta.

It's a quick recipe to pull together, you just need to be careful not to undercook the brocoli and not to overcook the scallops. This will work for pretty much any night of the week, and is a great way to get your veggies!

Making the Dish
What you'll need
1 head of brocoli, cut into florets
8 oz, scallops
2 cloves, garlic, sliced thinly
1 tsp, red pepper
3 tbsp, olive oil
1/4 cup, white wine
1/2 lb bucatini
8 oz, cannellini beans, rinsed
salt and pepper to taste

Get started by sautéing the broccoli with salt and pepper in a skillet with the olive oil. When the broccoli starts to soften (after 3 - 5 minutes), add in the garlic and red pepper, and a little more olive oil if necessary.

While the broccoli is cooking, pat the scallops with salt and pepper. Start cooking your bucatini in boiling, salted water. Then once the garlic has softened, after 8 minutes or so of cooking, add in the scallops to the skillet.

The scallops will start to exude their liquor. This will give your sauce a nice seafood flavor. When the scallops start to do this, add in your white wine and beans, and toss everything together. Let the scallops finish cooking (about 5 minutes total cooking time) and then remove from heat.

A minute before the package directions indicate the pasta should be done, remove the pasta from the water and place it into the skillet with the broccoli. Ladle in a scoop of the pasta water (about 1/4 cup worth).

Toss everything together over high heat until the water is mostly absorbed. Season with salt and pepper to taste, and serve.













The Result

The flavor of seafood permeates this dish, and the broccoli provides a healthy and hearty additive to make you feel good about what you're eating. The beans provide an earthy subtlety that brings everything together.

  1. Your recipe looks wonderful, and I can't wait to try it! I'm tired of my regular broccoli and lemon routine.
    My favorite ways to get veggies are:
    1)sweet potato oven fries with chipotle powder and salt (and ketchup with red curry paste mixed in!)
    2)steamed sugar snap peas with a sauce of soy sauce, rice vinegar, sambal oelek or sriarcha, and lime juice
    3) mix pureed squash or pumpkin into oven baked mac and cheese
    4) pumpkin puree and chipotle peppers coating cooked cauliflower
    5) steamed green beans with malt vinegar (strange but delicious!)
    6) cheese fondue with steamed or roasted veggies (brussel sprout halves, cauliflower, potato halves)

    1. Ashley - thanks so much! The sweet potato oven fries sound great, especially with the curry ketchup.

      Also, love the idea about mixing pureed veggies into mac and cheese. We pureed cauliflower into a meatball mixture once and it worked really wel! Will have to try it on mac and cheese soon :)
