Summer Soups for your Weekend Inspiration


Soup is usually one of those things that you eat in the winter when its cold outside and you need to feel warm and cozy inside, but it can actually be surprisingly fresh and refreshing on a hot summer day when done properly. A year or two ago I made a delicious vichyssoise and it was wonderful, and lately I've been craving something similar. With the wonderful produce available through the summer, there are actually lots of options, which is what inspired this search for the best summer soups. We'll be trying one of these in the near future and we'll let you know how it goes!


Iced Cucumber Soup with Mint from Bon Appetit:




We've had good luck with some of the other Bon Appetit recipes we've tried as of late, so this is a strong contender. The light freshness of the cucumber and mint sounds very compelling.








Summer Corn and Dungeness Crab Bisque from We Heart Food:







Corn. Crab. Bisque. We want to eat all the words in the title of this post, so that's certainly compelling...










Scallion Soup from Saveur:






Seems like a lot of the summer soups are green and this scallion soup is no different. The creamy flavor with the tang from the onions is no doubt a wonderful pairing.








Green Gazpacho from Not Eating Out in NY:




Again with the green, but gazpacho is normally a red soup, right? Although we're not a huge fan of the traditional gazpacho, we think this one might be worth a try.





Red Posole from Food for Scot:



Here's a dish that's neither green nor chilled. In fact, it's quite spicy. But we read once that one of the reasons that spicy foods developed in regions with warm climates (see: Mexico) was because the spice causes the eater to sweat and thus helps them cool down. That's as good an excuse as any for us to eat Mexican food!
